It may sound like a type of Spanish bandit, but the Rio Grande cutthroat trout is actually a pretty normal trout. At first, our imaginations were filled with images of fish holding tiny little cutlasses. This fish isn’t as cool as that, but it’s still moderately cool. You know why? Because we can catch them and eat them. The Rio Grande cutthroat trout is actually one of the 14 subspecies of cutthroat trout native to the Western US, and is New Mexico’s state fish.
